Fish Hunter Snapper Piccata

  • 1 Egg
  • 1 Lemon
  • 1 Teaspoon Olive Oil
  • 1 Tomato
  • 2 Cloves of Garlic
  • Italian Bread Crumbs
  • Parmesan cheese

Ingredients:

  • Preheat oven to 350 degrees.
  • Beat egg in bowl until thinned.
  • Roll Fresh Gulf Caught Snapper in egg.
  • Mix ½ parmesan cheese ½ Italian bread crumbs in mixing bowl.
  • Lightly bread snapper in batter.
  • Dice 2 cloves garlic, 1 whole tomato, slice one whole lemon.
  • Place lightly breaded fish on oven friendly tray.
  • Lightly drizzle 1 teaspoon olive oil on top.
  • Add capers, diced tomatoes, garlic, and lemon slice on top. Place in oven for 10-12 minutes or until fully cooked.
